Diary Free Muesli Cookie

 A delicious Dairy Free version of a Muesli Cookie.

Use the Muesli of your choice. This recipe works well with oaty, nutty or toasted muesli

This recipe makes a great cookie suitable for party & wedding favours that is quick and easy to make whether you use this dairy free version or dairy options. It works well both ways.

 Bake, seal & decorate them in the days leading up to your event.

I would recommend baking them no more than 5 days before you need them, so they are fresh for your recipients.

They can be sealed in an airtight container or in heat sealed bags

 
Heat sealers can be purchased cheaply, around Au$ 30.00, online
and are a good idea if you are making a large number for an event.

Dairy Free Muesli Cookies

Easy to make 7 - 8 cm cookies. Regular butter can be substituted for dairy free margarine

Equipment

  • 2 x cookie baking trays
  • 1 x Large mixing bowl
  • 1 x Wooden spoon
  • Baking paper
  • small saucepan

Ingredients
  

  • 60 g dairy free butter or margarine (diary butter can be used)
  • 1/4 cup golden syrup
  • 1 tspn bi-carb soda
  • 1 Tbspn water
  • 1/2 cup plain flour
  • 1 1/2 cups fruit & nut muesli

Instructions
 

  • Preheat the oven 160˚C - moderately slow
  • Line to baking trays with baking paper
  • Melt butter & golden syrup together in small saucepan over a low heat or in microwave in 10 sec bursts.

  • Add bi-carb soda mixed with water to the butter mixture. If the mixture doesn't foam put back on the heat for another minute until mixture foams.
  • Sift flour into a bowl & stir in the muesli. Make a well in the centre and add the warm butter mixture. Mix all ingredients together until combined.

  • Divide the mixture into 10. Use a spoon dipped in water to shape cookies into rounds about 1 cm thick onto a baking tray. Allow space between cookies.

  • Bake for 12 - 15 mins or until golden in colour.
  • Cool on wire cooling rack. Store in an air tight container once cool.
    Heat seal in bags for longer keeping for up to 2 weeks. Advisable to bake closer to your event for freshness of the cookie.
